I encountered a problem recently with my kitchen cabinets. The bottom of the cabinet is made of particle board. While moving some things stored under the sink, I noticed some damp spots where mold is beginning to appear. I checked the adjacent cabinets where pots and pans are stored and found the same condition. What I plan to do is remove this moldy particle board (which isn’t sealed and acts like a sponge) and replace it with something that will hopefully prevent this condition from happening again. My question is what material should I use as a replacement? Should I also seal it with something like a water based polyurethane? My house is less than ten years old and I don’t live in an area with high humidity or rainfall (the central valley of Calif.).
I appreciate your thoughts and comments and any recommendations you can make. Thanks in advance.

Depending on how the carcases are constructed, it may be very difficult to gracefully remove and replace the particle board. If it's sound, I'd suggest bleaching the mold to death and glue plastic laminate on the particle board. Regarding finishes, anything that's water/vapor proof will help.

As VATom suggested,laminate is the way to go.I'd cut a piece of plywood to fit,then laminate top and bottom, and caulk the perimeter to seal out water (siliconized caulk). Good luck.
Like said above , with one more thing..find out where the moisture is coming from. If it is that bad that you are contemplating r and r of a cab. floor..you got problems.
