We are remodeling our kitchen and having new maple cabinets built. We wonder if melamine constructed drawer boxes and roll outs are a good choice.

I wouldn't. In drawers where there's weight and collision, don't think it would be a good value decision. In roll out trays, a week bottom will sag over time, and in the case of canned goods........ Moving parts I don't think a good idea with melamine.

Melamine is the cheaper alternative (for your cabinetmaker).
I don't think strength is really an issue. Melamine stands up pretty well to surface abrasion under normal use; but if you are using a tray for pots and pans, and sliding them in and out, the Melamine will probably show signs of wear faster than a varnished wood surface.
Some customers like Melamine interiors because they like the look and the surface can be wiped down easily. Not that varnished (or lacquered) can't be wiped down, but some feel the Melamine surfaces just look "cleaner."
I would ask your cabinet guy what the alternatives are, and the prices for each.

The most popular type of mat'l used around here is 1/2" baltic birch. Its a little more expensive but durability and appearance definately make up for the cost.

I would go with 1/2" baltic birch, or 1/2" hardwood, box joint or dovetailed. Make sure they don't use 1/4" bottoms on any roll outs wider than 15". If you would settle for melamine, why pay for custom built cabinets?
