I just bought a house and am trying to replace the kitchen tile backsplash. The previous tile was adhered to the drywall via construction adhesive instead of thinset, therefore tore the drywall completely off when I tried to remove it. In replacing the drywall I’m having trouble figuring out the best joinery between the existing drywall and new drywall as it is directly behind the kitchen counter and cabinetry and is not a clean edge. Any recommendations? Also, as this is on an exterior wall, do I need any vapor barrier between the existing insulation and new drywall?

Clean up the edges as best you can. Screw a “lath catcher” to the old drywall where possible ….add a strip of wood if you need it (where possible) to join new to old drywall .
Mud and flat tape along the counter/cabinet to fill in any voids.
Caulk and grout new tile to counter and the rest.
