Secondly, for the cost, is the veneer version of these doors a problem? They tout no warping, but is there ever a problem with de-lamination or anything like that.

On the veneered door, there should be NO problem with warping--especially for interior use. That's the one I would pick.
However, to maintain the warranty, be VERY CAREFUL to follow every instruction and finishing guideline that Nick's provides you. Any deviance WILL void the warranty.
I don't know Nicks Building Supply, but most warranties include quite a few items that will void that warranty if not adhered to. I cannot find a warranty on their website, so make sure that there is one. For interior use, it should be for the life of installation. WDMA may be of
some use here.

I got a number of very similar veneered knotty alder doors for my house in Colorado.
A number of them had very large knots which I normally would like, however the veneering process knocked out out all the knots, so the doors arrived with them filled in with a uniform color of brown putty. Not really a problem with smaller knots, but when they are on the order of 2" long, these puttty spots stuck out like a sore thumb. Luckily, my wife is an artist, so I gave her some sample real pine knots and she faux-painted them all. And they look great. But they would have looked like hell if I had left them as is.
The sample door you showed had pretty small knots, so maybe this won't be a problem for you.
We have not had any warping problems in spite of large swings in temperature in my house, although the humidity here is pretty constant year round.
alder is not a stable wood and it would be at the bottom of my list forwood to use on doors, so a veneeer woiuld be the only way I'd want to get that look
