I have an exterior door that has lost the first layer of veneer on the exterior side. Other than that the door is in good shape. The door faces west so it gets a lot of sun, although it is now behind a security screen door. It has gotten wet from a failed flashing, but that is fixed. I’m thinking about covering it with plastic laminate. Any reason why not?

The laminate will likely warp in the heat.
Sounds ugly. But what have you got to lose except your time and some cheap material?

Start over. What you propose to do is not worth the materials, let alone your time.

Hpl expands much more than wood in direct sun - if a soft adhesive is used it will probably delaminate, if a hard adhesive is used the door will have a pronounced bow.
good looking laminate is about the same cost as a slab door
