I’m finishing up work on an insulated attic access hatch in the ceiling and I am having a little trouble coming up with a good way to latch it. weatherstripping is installed on the top side of the trim in the opening to air seal. I want compress the weatherstipping when the hatch is latched. Gravity isn’t enough by itself. I found a few figures that show the use of sash locks to do the job but I can’t figure out how a tradtional sash lock would work for this application. The sash locks I am thinking of are those found on a normal double hung window, both the lock and keeper bolt onto the same plane. With the attich hatch, the two planes are perpendicular. Can someone explain to me how a sash lock could be used?

You might want to try a buckle type latch that can draw type via a small amount of cam action. Maybe one near each corner.
Since the hook will be getting some tension, you may need to back up your 1/4 mdf panel with additinoal blocking for fastners while also possilbly modifying the hook (bending??) to appropriate position for catching. This image is but one example of typical hardware, other manufacturers may offer a better stock configuration that would work better.
A simpler ( but probably cruder) approach would be to mount 4 threaded studs in your panels that locate themelves through some drilled L brackets attached to stops. Wing nut each threaded stud until desired compression is achieved.

Is there a specific name for this type of latch? This looks like it would work pretty well and wouldn't Be too ugly
Google "sash lock", then
Google "sash lock", then press "Images" on the top. Browse the images you see and select one you like. You will then find a "Go to page" button or some such that will take you to the page for that vendor.
This is a good way to find lots of hardware items and similar stuff that is otherwise difficult to zero in on Google.
Look for sash locks designed for casement windows.
