I have removed a layer of ceramic tile, and I am left with a layer of luan cover in thinset. Does anyone have any suggestions on how to remove the luan from the subfloor? It appears it was secured with only screws. How many screws is hard to tell because of the thinset.

Probably 6-8" OC - Lots of them in other words.
and it could have been glued too.
Start by getting under it and prying up some sccraps to find out. If glued, I would say rent a demo hammer with a chisle tip, otherwise, just use a flat prybar and keep working
