I am laying luxury vinyl plank flooring over tongue and groove osb subfloor in a three-seasons room. The edges of the osb are not terrible but not perfectly level. Are there any alternatives to sanding them smooth? What about using something like a cork foam underlayment? Self-leveler? I know they are good for soundproofing and vapor barrier but was not sure about “smoothing” imperfect joints. Thanks for any guidance you can give.

Define (quantify) not perfectly level.
several types of substrate are sold for this use, and they and the tiles have specific capabilities. (like how flat they have to be and how much variation they will work over.)

you say three season. is there a moisture reason the edges of the current subfloor do not match?
The floor was exposed during construction (rain) for a summer. As I inspect it it is not too bad other than at a few corners. Being over cautious. Floor is suspended and fully insulated underneath.
Your caution will be rewarded with a nicer floor.
As will a few passes with a belt sander and some leveling compound.
You need to float the floor to get it smooth enough.
