Assuming you want a clear finish, good marine spar varnish would probably be your best choice. Find one with a UV inhibitor, since sun is the enemy here. Nuts as this sounds, consider making a cover for it. I used to laugh at the people who made little covers for the woodwork on their boats until I spent a winter making and varnishing a new tiller for my boat. When I put it on the boat, I put on a cover as well. It's in the third year with out being refinished. If you leave your bench exposed to the sun, you'll probably need to do a sand and re-varnish every year or so.
