Pex or Type L copper
PEX A or B? IM having a hard time finding PEX A in 1.5 inch
One other thing when you bury the pipe lay down crushed rock first and tamp it; then some sand; then the pipe; then some more sand; some more rock; tamp it then soil. If anyone has to dig later it's nice to know when you get close to the pipe.

That's $6000 worth of copper. I'd use PVC

For a 600-foot main water supply run through semi-rocky earth, PEX is generally a better choice than SCH 40 PVC. PEX's flexibility and resistance to ground movement make it more suitable for such conditions.
schedule 80 pvc is pretty tough
I would not drink from PVC on a continuous basis. Great for irrigation not potable water
