   Yes to both questions, but....

   Metal clad or fiberglass clad slabs can be purchased through good local lumberyard a, can't say about the box stores that drive them out of business.  Call your yard and talk with them.  Their suppliers are usually the ones that hang and prep those slabs to jambs.  There are size constraints involved with the usual slabs they are given.  Know your jamb opening to the 1/8 and make the call.

   You can recut hinge mortises on existing in place jambs, with router or chisel.  A good carpenter should have no problem.  One thing to consider if using the former door hung in that opening is that the latch edge most likely is beveled.  Where it swung easily into the original jamb it may now bind.  So, you might have to remove a bit of that old (now too wide) bevel.  When closed it will create a wide space between jamb and door than b/4.

   I don't think you can set new hinges into a metal jamb with a chisel and router.

   I work at a "real" lumberyard.  I have ordered slabs before just exactly for the situation you describe.

   Called the supplier, explained the situation.  Got their exact door slab size and compared it to the existing metal frame.  Ordered the slab with no hinge prep and no lock bore.

   Took some effort, but was not a big deal.
