I am considering having a metal roof on the next home I build. I’ve noticed that I don’t see plumbing vent pipes sticking out of the roof. Are they just vented through the roof vent? Also, I see many buildings with no gutters and the roofing covering the face of the soffit. What is better–to have a wood soffit with gutters or having the metal roofing cover the soffit and have no gutters?
Are there any sources to get more information on metal roofs?

Soffit or no is a design issue with lots of variables, not a metal roof issue. Same with gutters.
Plumbing stacks must vent outside - what roof are you talking about? Yours isn't built yet. Maybe it just isn't all finished.

*Larry, I have a metal roof with no vent penetrations. Bath fans and range hood go through side walls, as well as 1/2 bath plumbing stack. Washer/laundry sink use a Studer vent in a wall, and two full baths have Studer vents in the attic. The roofing is directly on stapping, 3 large gable end vents...you need plenty of air with metal roofs...Piffin's right on the soffits...
*My 250 year old house has a standing seam metal roof and prior to my living there, the roof had no penetrations. When we installed indoor plumbing, my plumber ran the vent pipes through the metal roof and sealed them with rubber/metal boots. They are very effective - no problems. I have since added additional penetrations with no problems. And a new garage/woodshop will have a new metal roof and I intend to have roof penetrations. Good metal roofing manufacturers - and there are quite a few - will work with you on the many issues you bring up. Dollar for dollar, metal roofs are the best investment - mine is over 100 years old and still working well. For the price, I know of no other rooding material that will perform that well.
