I am about 80% finished on my new two-story house. Insulation and sheetrock are up. Water lines to second floor run up from slab in master bedroom (downstairs) interior wall. Running water in second floor baths is very noisy in master BR. What can I do? I’ve got insulation in the wall around water pipes but not any more than I put in exterior walls. Pipe to second floor is 3/4 ” copper. I don’t mind tearing into wall if there is somethimg I can do to quiet the running water.

Maybe water hammer, however I am guessing you have a rattle against the studs and it needs a a support or neoprene pad to hit
Some years ago I worked on a kitchen which entailed moving the sink and this caused a water line to require a "tee" fitting. After this fitting had been added "running water" noise came with it. so from this the sharp turns from elbows and tees generate the noise. You might be able to reduce noise by installing bends instead of elbows.
