Anyone have any ideas for interesting deck surface materials for a second floor deck with a plywood surface? I find all the vinyl materials pretty boring. Can you do stone or tile on a plywood deck?

You can use any material you want, so long as the structure can bear the weight, the underlayment is stiff enough, the proper install technique is used, and you deal properly with drainage. Not much different from doing a shower floor, really.
Tile deck
A couple of companys make a waterproof roof deck membrane that is also a tile membrane. One I'm familiar with is DuraDek's Tiledek.

It lays down similar to a rubber roof and tile bonds directly to it.
2nd Floor Deck
I assume deck is open to weather and maybe freezing. Neighbor has one so I recommended EPDM over a pitched PT plywood decking on pressure treated sleepers. Used Thinset mixed with latex to bed some pretty interesting glazed floor tile. Used waterproofing on grouting (retreat every other year). Drains into guttering. Looks and works good. Tyr
