Not an urgent issue, but I was wondering: If we set the oven at 450 degrees, and then change our mind, turn it off and reset it to 425 (all within just a few seconds), it shows the temp at 389 and then climbs up to 425. But supposedly it was holding 450 — was it lying to me all along when it said it was at 450?

Did you open the door between setting?
Well, what's the thermostat really measuring - air temp + the radiant IR from the element?
That would tend to respond fairly quickly - what's IN the oven is what the thermostat is hopefully "tuned" to control, albeit in "open loop" without a temp probe.

If this is a combination convection oven/ radiant oven it could have two t-stats. If so could you have switched between the two modes?
