How long can paint be kept in a never opened 1 gallon and a 5 gallon bucket. I have a 5 gallon bucket of ceiling paint and was wondering if it is still ok to use. (2 years old now)

5 years easy, if it's kept from freezing or overheating.
To me it's like using the old milk in the refrigerator. You open it up and give it a sniff test. If it smells okay you taste it. If it tastes okay then you are good to go.
I'm not saying you should drink the paint, but open up that old can no matter how bad it looks give it a good stir with a drill attachment, then try to use some on an inconspicuous area or on a cardboard box or something. If it looks good it generally is good. You may have to run the paint through a mesh strainer to get any chunky bits out but it's generally worth it for good quality paints which are expensive.
For cheap paints throw them away and just buy new.
