I would like to know when painting a door way from one room to another what color should it be? The color of the room your in, or the color of the room your entering? Also we have a soffit in our kitchen how do you paint it ? The under side the ceiling color? Or the same color of the room?

When you say painting a doorway, do you mean the jamb and casing? If so, it should be the same as the trim color in that room. The place to break trim colors is at the inside corner of the stop and the jamb, on the door side.
How deep is the soffit? If it projects out just past the cabinets I like to paint it wall color, because it looks more like a wall in that case. If it's a deep soffit, like 24" out from the wall, I like it to be ceiling color because it looks like the ceiling steps down.
Either way, to avoid the striped look I like to paint the whole thing the same color.

If you are asking about the door itself, to me it depends on whether the door is normally open or normally closed, and whether the room it opens into is more public or private.
For example, if the door is normally open and, when open, shows to a public room I'd tend to paint the side that's facing visible to match the other doors in the same room. If the doors are normally closed I'd paint each side to match the room it's exposed to when closed.
Another option is to paint the doors in both rooms the same with a color that works with the different wall colors of each room's walls.
It's not a door. It's a opening to enter the kitchen and another one is to enter the dinning room. ? A OPENING!!!!!! No molding around.
Without anyother information (colors, angles at which it will be viewed, etc) I would take it that the dining room would be the more formal space and the thus color in that room should be uniform and thus the opening "jamb" should be painted the diming room colors.On the other hand if the the dinning room is only used once a year, at thanksgiving and it is full of family vs formal dinners, while a kitchen/family room is in constant usage and where everyone hangs out then the argument be make tha the colors should be uniform in the kitchen area..

then it is not a DOORWAY as first mentioned. Itr is an archway or openning. Paint it whatever colour suits your fancy

Maybe even paint the narrow part of the archway a different color altogether, something that compliments the other two and ties them together.
Case it in a nice wood, stain, and you won't have this problem.
