I’m planning on building a bathroom with shower directly above an existing bathroom. I have two questions : 1- Can I cut into the existing vent pipe for my waste lines ? 2- The shower will be on the opposite wall from the waste pipe, with 2×8 floor joist and five foot between waste pipe and shower drain do I have enough slope ? Thanks for any help you can give me !

No, you can not cut into a vent for waste..
and yes you do have enough room to slope a drain to the one below..
Being that yer doing this on the second floor theres no biggie in a new vent line.
I think...right guys....1/4" per foot?

I think the uniform plumbing code won't allow wet vents between floors. All fixtures got to be on the same floor ( and a bunch more restrictions) to wet vent.
Do a search on wet vents and you will get a lot of info. Toilets cannot be be upstream with a wet vent (second floor toilet above other fixtures).
one other item to watch for.....radon abatement system. More than one abatement line has been mistaken for a plumbing drain line. A radon system simply stops under the slab.........could get a bit messy.
