Sounds to me like you're having second thoughts about it.

(Divinity excepted.)As far as your other questions - guesses based on experience. Some people would claim that to be an estimate.Maybe you should hire a design professional. Or a construction professional.
*Hi hobus.I know how overwhelming work of this sort might seem.Most of the pressure goes away once the cribbing is in.After that, you can leisurely remove the old foundation. Sip wet drinks as you toss earth and rock.I like solid reinforced concrete walls, so my next step is forming. But you can use block, if you want. But remember, the drainage pipes go in while you still have access.After the walls are made, and have set three days or more, strip the forms and install your protective coatings, insulation, etc.Stay in touch with the inspector, so you know when the inspector wants to critique your efforts, pat you on the back, or buy you wine and cheese.Around here, we backfill with all gravel to the last 12" below surface. You may not want to do that much. So find out.Does this help?
