I found this old article:

.. and I am really interested in finding some house plans that minimize the cost per sq ft in terms of materials and labor. I’m looking for something in the 1200-1500 sq ft range.
Does anyone know of some specific home plans that fit the bill? Are you aware of any other forum discussions on this topic? My searches were not too fruitful. Thanks!

There isn't much to know. Build a simple structure, square or rectangle, keep your windows and doors on 16 or 24" centers as much as possible, keep the bathrooms and kitchens back to back or at least close together, use stocked materials, etc. No matter what you do the savings won't amount to much. If you're thinking you can save 20 or 30% over an average house you'll be disappointed.
