I am thinking of troweling a thin coat of plaster over regular drywall in my shop. I was going to staple mesh tape over the seams and possibly adding some white latex paint into the plaster. One coat and I’m done. Has anyone done something like this before and what problems may develop?

Plaster doesn't adhere properly to regular drywall.

*you can use a special primer to prepare the drywall and then skim-coat.. but do not add anything to the plaster.. just put the plaster on .. let it cure.. then prime & paint
*I agree with the first two points...However, I have a friend with a cabin who's father plastered over sheetrock 30 years ago and it looks great. Feel lucky?
*The guys who did my plaster told me that an alternative to blueboard is to hang the drywall backwards. He says that paper will hold the plaster better. Anyone else hear of this? We didn't do it, so it's just a curiosity.
*I've seen plaster troweled on over drywall hung backwards at least twice, and there were no problems after. both times drywall was on site, and a last minute deciscion to go with thincoat was the cause. Works because the back side of drywall is more rough & porous thqan the front, making for better adhesion.
*what you lot call sheetrock we call plasterboard. the same stuff though. the reason for the rougher back paper is to take a full plaster job. don't know if our plaster over here is the same stuff as you have. don't even know if what you want to do is a full plaster job. here in ireland, 95% of all interiors are full plaster.good stuff
*My plasterer uses concrete glue and works fine, he uses regular drywall tape for the seams too.
