I’m currently building a cottage with 7/8″ corrugated metal siding on the exterior. I want to leave an air space behind the metal siding but I do not want to use traditional wood strapping/battens. Does anyone know for a plastic substitute that will not rot over time?

If you intend to attach the siding with screws you might consider steel furring.
Azek and similar products are expensive but someone might be aware of a "recycled plastic" product that may suit your needs.
Lowes has a Trex like band board, 10" wide by approx 5/8th thick, you could rip lath outta that.

buildings that I have seen similar to that for storage, sheds, barns etc were as follows;
vertical studs
Horizontal 2x4 strapping
The steel siding
If this is what you have in mind, plastic strapping would not work, because it does not have the necessary structural stability, and if it is any larger than a chicken coop, it would suffer from thermal expansion, either tilting the ends of the building out on hot days, or causing ripples in the surface.
