In excavating the walls of an old farmhouse yesterday I found an old hole in the side of the chimney plugged with a paint can which immediately fell out. I can see the stainless chimney inside which services the boiler and water heater. Is there any danger here to be worried about? What is the appropriate way to patch this hole?

Brick original chimney? Hole inside or outside? Assuming brick and if the liner was done right I would mortar in a few new bricks. You could always use a CO monitor before doing anything. Put it near the paint can hole and see if the hot water, furnace has any effect. After patch you could leave the monitor with the client--makes you the great guy who cares about clients. Otherwise you would not have asked.
Plug it with bricks an mortar. Am betting the stainless you're seeing is a liner or insert and probably not insulated. Shouldn't take more than 15 minutes. And don't use sakrete. Get real mortar mix.
