I’m looking for some advice on how I should space the studs in a knee wall for my gambrel. Here’s what I’d like to do. I intend to add 2 dormers to the front of the house and would like to include shelves, drawers, and doors that will make up the “built ins”
Is there any place where I could get premade built in cabinets that could be used between studs placed at 16 or 24 inch centers? Does anyone have any info that could help in this matter?

Not sure what you're asking.
What's a pre-made built-in? Isn't that a contradiction in terms?
Are you looking for a store bought off the shelf, pre fabricated cabinet/shelf system that you're going to slide or lift into a space you're created in or along a wall, or are you looking for plans to follow to create a custom built-in cabinet or shelf/system?
For either case there seems to be as many options as you can think of.

Sorry about the confusion. I wanted to know if you could get cabinets that would fit between the studs on 24" centers. Since they are inside a knee wall, the front of the unit would be all that you would see. I would rather not make them myself, but would like to get a product that can be installed and is of high quality. I figured getting this info from the people here would point me in the right direction in order to minimize the amount of time running around to different lumber yards and the like. I hoped to get a name of a company that I check out on line, or products to avoid.

Your factory cabinets are sized in widths of 9", 12", 15", 18" etc. every three inches.
Intresting thought - I have made site built units to fit certain under eaves spaces before like this but never used standard sizes. Normally there are other structural reasons to not deviate your stud layout away from the 16"OC but I wonder if you could do a layout with 19-3/8" OC and fit 18" units in since the sides of the box are about three sixteenths undersized on each side.

Once again you have provide me with some good information, but now with that info comes another question. I know what you mean about the 19-3/8" oc that should leave me with 17-7/8" opening between studs, which could work. I guess I figured on the 24" oc and being able to get a carcass in between the studs which would be about 22-1/2".
Now that I'm think about, what if I were to put a header, or double or even triple the floor plate, below the cabinet base in order to allow for wider stud placement. This would increase the size of the toe kick but I can live with that.
In short, I was hoping that I'd get a name of a company that make cabinets just for this type of installation. A quality product, that will look nice, and work even better than it looks.

The 21" cabs would work fine with a 24" layout. if you've got the height at the back, base cabs would work because they can be had with drawers and the toe kick is in the baseboard area... Vanity units are shorter and not as deep. I see this as having wall units about an inch or two above the baseboard though.
Cabs are stock, semi-custom, and custom from factories. Any size can be factory made in full custom but at cost. Go to a ktichen center that sells a variety of cabs (don't waste time at Home Depot) with your pertinent dimensions and your idea and they can configure something for you in a semicustom.
