I have to replace some 4x4s with PT and the old pier anchors are not stainless or otherwise ideal for new PT wood.
If I ensure that all contact points between the PT and the anchors is seperated by a self-adhesive glazing, ala Grace Vycor, would this prevent the corrosion?

Yes, the Vycor will prevent contact, eliminating the corrosion there. The fasteners are tricky. Galvanized will be good with the old metal, but not last in the wood. Stainless will last in the wood, but eat the old metal where it touches it. If the fasteners are big galvanized bolts, they can be coated with grease which will help them resist the new PT wood for longer.
