We are designing our custom home now. My wife really wants a fireplace, purely for aesthetic reasons, and we have compromised for an electric unit. Is there a consensus on the most realistic looking fireplace brands?

IMHO if you are set on buying a non woodburning unit own the fact that it's not woodburning. Buy one that looks unique and interesting, it will never look like a woodburner so don't try.
Check out the water vapor fire place inserts, its crazy how real the flames can look.
