For a house built in the early 1900’s in need of interior remodel who would be the best to consult concerning the structural integrity, plumbing, and electrical systems. Home inspector, remodeling contractor, individual contractors e.g. plumber, electrician, architect, engineer……?

I would recommend an initial site visit by an experienced remodeling contractor. Most would be able to advise on specifics while also giving some procedure information on the whole picture. Additionally, they would be able to call in their various trade contractors for advice as necessary.
Of course you could certainly schedule you own trade specific contractors. However, in my experience it's often better to hire a band with history rather than take a chance with a jam session. Depends on the musicians of course.
depending on the amount of work and "upgrades" this home has had. when i say upgrades i mean adding to the original systems (plumbing mechanical and electrical) without properly assesing the limitations each one of these has.
Like Calvin said, a remodeler with a proven record working on older homes, should be able to take a look at your systems and give you a pretty good idea of the extent of your remodel.
Actually, to get advance warning on some of the issues, a good person to have tour the house is a reasonably savy DIYer (if you know one) who owns a house of similar vintage and history. Would certainly not as thorough as a good professional review, and would not give you good cost estimates, but would give you a "heads up" on some of the major issues.
And it would help put the guy in a good position to give you advice later, when the contractor seems like he might be blowing smoke.
