I will be dismantling a post and beam house in the near future. A large portion is insulated with blown in rock wool. Is there a vacuum device that will allow me to remove this material diectly into a dumpster or very large bags with minimal fuss? Can this “vacuum dredge”be rented ?

If there is I wish I would've found it. We recently removed a ceiling that had about 8" of blown in FG and it was messy. Ended up using a grain shovel and big plastic garbage cans.
Yes, I had it done at my own house before a addition. I used a guy who installs blown in insulation and he ran the machine in reverse. The old insulation (rock wool also) was blown into large cloth like bags and then put into the demo dumpster. Worked great. It was 4 years ago and I paid around $5-600 for a 1800 sf attic. In this area there are also vacuum trucks that do this type of thing.
