here’s the situation: 100 year-old house, plaster/lath wall with sizeable
(10″) circular hole from a recently removed washing machine drain. I am a professional carpenter but I only build new houses and have no experience in repairing a hole this large in this type of wall. Asking to hear the techniques of the experts. thanks

Wow!
That was a BIG washing machine! Mine only uses a two inch hole.
;>)
I would nibble the plaster back to about 16" x16", edging at the studs and leaving the lathe. Then screw a piece of 3/8" drywall over the spot and tape it back in.
Before mudding the edges back in you need to stabilize the sand and grit in the rough edge of the plaster. There are products for this but to do just a small patch, you could use some white glue or thin down somew yellow carpenters glue. Paint it on with a disposable brush and let it dry.
There are other methods for the purists but this works for a minor patch in a utility room with limited experience.
Good luck.
