All over America there are pipes that work and have not been inspected or permitted.
I agree it is better to get right with the permits and any local regulations.
You may not need a plumber at all. You can contact your local authority and start the permit process. Be clear about what happened, and you should be all right.
Some places have, however, moved to eliminate competent building inspectors and have delegated compliance statements to licensed plumbers and electricians. The place to start is with the local building office.

I wouldn't bother. Nobody is going to check and since it's all covered up now there is nothing for an inspector to see. Don't create a problem for yourself where it doesn't matter. Your insurance company will be far more interested than the building dept.
How so as far as the insurance company? Like what do I need to consider? Again, I'm clueless.
Did you move any fixtures or do any renovation at the same time as the re-piping? Did you change the layout or piping runs or did you replace "in kind"?
You have a system thats been working for a year and if all you did was maintenance to your plumbing then why do you need an inspection?
