Replace or cover 1x board roof sheathing
Gents,
My asphalt shingled roof is due for replacement. The roof is sheathed with 1x boards with a gap of approx. a 1/2 inch. I’ve found several instances where shingle nails missed the boards. Should I cover the existing boards with plywood/OSB or pull the boards and resheath with the sheet goods? I’ve noted that shingle manufactures call for sheet goods which is probably required to maintain the shingle warrenty.

I wouldn't say without seeing it but early in my concerns would be if the rafters could take more weight if resheathed. Also if sheathing boards are removed don't bet the rafter layout to be plywood friendly. But a shingle roof with square edge boards for decking as you have is hardly ideal.
Millions of houses are sheathed just like yours with asphalt shingles on top. You can reshingle as is or nail 1/2" CDX down over the sheathing. No reason to take it up at all.
