I have heard from a plumber that he was told (and believes) that open cell foam sprayed into walls will, over time, eat into any PVC piping the foam may come in contact.
Has anyone heard of open cell foam causing damage, over time, to PVC or any other material?

While there are several open-cell foam formulations on the market, I'm not aware of any that can act as a solvent for or that can cause any degradation to PVC. Or ABS.
I believe the outer sheathing on Romex (or NM cable) is also PVC.
The questions you should be asking your plumber are: By whom was he told this...and why does he feelhe should believe it?
Personally I've been working with both open and closed cellular foam for about 7 years now. Whatever I have heard that might resemble what you plumber believes remains unsubstantiated rumor. If rumor is never substantiated, then I see no reason to consider it as useful information.
I can recall some of the old squirt-can foams causing damage to romex jackets. (The jacket didn't "melt", but would turn brittle and crack over time.) Of course, that old stuff was pretty vile.
