Hi! I’ve got a standing seam roof on a custom home and need to create a system for the home owner to be able to maintain the cedar siding and trim on the second floor.
Has anyone used these S-5 Attachment Clamps and know if they would work well (and how) for being able to attach a ladder to a lower roof?

If you use them and a length of pipe between them it will work just fine .
how are you attaching the pipe or board to the clamps?
In that picture the 2 x 4 was just resting against the vice grip clamps .
Not to be done by those not experienced.
The S 5 clamps will have a hex nut to lock onto the standing seam and the pipe goes thru the openings like the 2000 or 4000

Are any of those designed to be used as a ladder base?
I doubt it .They are made for snow retention .
We often use sheet metal tool vice grips for the same purpose. Clamp them on and run a 2x4 against them.

I would be cautious about creating any sort of access setup like that. If something happens to someone working on it, you'll be on the hook.
