FWIW, I watched two of our local McDonald's restaurants get torn down and rebuilt new, and both used a high degree of panelization.
Mcdonalds is doing the same thing here.
Knock down the old building, and truck in a new one. Re-open in less than 2 months.Glamorous
BTW, these are technically "scrape and builds" meaning that we tear down the existing buildings and build anew one. One has a Taco Bell onsite now and the other is just an unrelated restaurant.
I imagine 3 months from start to finish... If I take my time.

Pete:
If I may offer some advice, make sure your countertops, if specified solid surface, are fabricated and installed by an experienced contractor.
I just bid on a Taco Bell repair on a new store. I was too high and didn't get the job. The seam in the main top still looks like crap, so they got what they paid for. The clerk told me the damage was caused by a mechanical contractor dropping somthing on the top after install. I would cover those tops with 1/4" luan until opening day.
I've installed Corian in McDonalds without callbacks.

Thanks for the heads-up

I hope things are going well for you Pete. I live in the cleveland area and would have been interested in taking a look at the drawings, unfortunately I have been working out of town and haven't had time to surf the net. If you have more projects coming up and need a reliable carpentry company please keep me in mind, thanks, Matt
Matt,

Gene & Dustin,
Taco Bell had done the "kit" buildings in the past and they've turned out to be maintenance nightmares for them later on.
These are stick built, all the way.

These weren't kits, they were simply panelized. Same type of panelization as is seen on some of the top end custom homes, here.
It's not much less costly than stick framing. It may even cost more. But it certainly cuts time in the field.
