There are cabinet handles that are basically round dishes with a U-shaped swivel handle that pulls out. Similar to this "recessed ring pull" only the surround is circular: http://www.myknobs.com/ri690228130.html
Unfortuntely, don't know where you might find them.
There are also "thumb pulls" like this that would fit the hole (with a little adjustment), but they'd be difficult for arthritic hands: http://d2ad4evebppadi.cloudfront.net/ribp72965183-thumb.jpg
I have an idea...
Make the existing hole much larger, mount a plate to the back of the door, screw the current knobs to the plate, and find a way to trim the hole. Maybe a turned wood insert, of even a creative use of a pvc fitting etc.
Fill the holes with this:

Then use these as the pull:

Low profile, and they are easy to tug on. Place the closed side facing the latch, open side facing the hinges. Only need a handle on the side to open.
