I just bought a house that is a total gut and want to add shed dormers to both sides of the house. Roofers are not taking any work until next summer because of labor shortage so I’m going to try to do it myself – I’ve gut renovated 3 houses but never touched a roof….. I’ve found a couple of articles but no specific plans or step by step instructions. Can anyone provide direction to either videos or more specific plans to build shed dormers?

You will be making a structural change to your roof and it needs to be properly designed. I think you should engage a design professional (architect or engineer) and get drawings made. If you are able to read drawings you can then do the work yourself.
There are hundreds if not thousands of YouTube videos on how to install roofing.
If your roof has trusses don't even consider dormers unless you want to involve an engineer.
It depends on the dormer that needs more info. Are you doing same size on each side, and directly opposite each other? Will it be full length or stepped in at the ends?Do you have to raise the ridge, or use the old? Is the outer wall directly over the wall below? what size are the ceiling ,(destined to possibly be floor joists)?
Three places you can get all the structural info is your local building code book, many lumber yards have an engineer on staff, lumber suppliers, especially engineered lumber suppliers usually have engineering specs for their products.

If your roof is trussed, don't even think about adding dormers without a lot of engineering.

While Installing shed Dormer Their Are Lot of Precautions and Fine Crafting Will Be Needed Which Provides A Long Lasting Life Of Shed Dormer.There Are Some Steps By Steps Guidelines To Install A New Shed Dormer At House:-
1 - Mark an outline of the opening outer part of the roof, as well as insider part of the ceiling. This is where your measurements really come into play. Measure three times, cut once!
2 - Remove the shingles from the area that will be taken out for the dormer. Drill pilot holes at each corner . Lower 4 pieces of string at each of the holes, and staple the top end to the roof.
3 - Attach a plumb bob to the 4 corners. Mark the location of the plumb line point for each corner. Remove the string Only when you are done.
4 - Drill through the ceiling at each of the 4 points. On top of the roof, place duct tape and plastic to keep the weather coming through the holes.
5 - inside the room, cut the rectangle that is described by the 4 drilled holes. You should now have a clear view of the rafters.
6 - Construct the framework for the dormer using the same size of dimensional lumber as your rafters.
7 - Cut the upper roof from each points.
8 - Remove any of the rafters necessary. If you remove more than 2 in the span, you will need to sister in more rafters on each side for stability.
9 - Install the dormer side frames to the existing rafters. You may need to put in a header at the top, and perhaps a footer at the bottom during installation.
10 - Install cross members at the lower end of the dormer. The bottom frame should be ½ an inch larger than your window.
11 - Install the outside plywood sheeting around the new dormer.
12 - Install the ceiling rafters and plywood on top of the shed dormer.
13 - Install the roofing material and skirting. It is wise choice to use a high-quality sealant to run the edges of the new dormer skirts.
14 - Install the window. Seal the edges of windows with a window silicone.
