Should I caulk where stair risers meet a skirt board?
I am a DIY’er who recently converted carpeted stairs to oak treads and risers. I am not an expert, so yes, the seams are not as tight as an experienced carpenter might be able to do.
I have seams along where the risers meet the skirt board. It’s nothing big. Let’s call it as thick as a few sheets of copy paper, at worst.
So the question is, is it common practice to caulk those areas? Risers and skirt board are the same color.
I do not want to do molding.

Sure, but be aware that seasonal changes may open or move those joints. Cheap caulk might not do as well as an elastomeric product.
And remember, never back up.

PL white door and window sealant is way more durable than latex. It is a bit messier to work with though.
How about some small quarter round. It'll hide the gap and wont show movement
Wood putty....color match. You didn't mention if you did hardwood flooring too. If you did or didn't it is wise to control the house humidity level year round. The risers should not be expanding and contracting lengthwise....if they do it will be negligible.
