how big is the yard, or were they looking for a particular element?
Two structures (house and guest house) are setting in the middle of 23 acres of farmland in an unincorporated area. The house dimension is 44' by 87', the guest house dimension is 40' by 40'. These two structures are between 17' and 34' apart, since they are located along a circular driveway.

It may depend on why you are having the tests performed.
are you trying to get better lawn?
are you contemplating a new septic system?
Are you planning a structure or new driveway?
Do you plan to make a rammed-earth structure?
It could be that the area seems so uniform that a single sample could be enough, or it may be that this is not the best course.
The soil inspection was being performed to assist the engineers in determining if the soil is adequate to support the aforementioned structures.
I want to guess that with a trained eye to determine that this is a point in a fairly uniform field, a single test should be adequate to inform foundation decisions.
If the site has visual differences in vegetation, slope, surface structure, or other details, more locations and samples would be called for.
