You're still going to end up with one straight line. You can only stagger in one direction.
How it looks is a function of how well you can lay the tile. Staggering, especially if you aren't dead center (or whatever stagger you use) can cause your alternating line to skew.
Visual benefit? It's different. Will your wife or customer or you like the pattern? Lay it out dry to see which way works best.
