Any advice on what I could use to stain some Alaskin Yellow Cedar? I hear that it doesn’t take stain too well. I’d rather just let it stay natural, if staining it will come out blotchy.

I used to stain it with a dark cherry tone in water stains. I loved the way that it developed strongly varied tones (you'd call it "blotchy"). I wouldn't use the straight grained stuff, it stained too evenly. If you want an "evenly stained" (I call that "boring") look, you can get it by spraying glazes (toners) instead of staining.
Do you have any recomendations for a particular product?

Minwax polyshades will do the trick for even toning. There are many other possibilities. I used to use W. D. Lockwood water stains, but they won't give you an even coloring on yellow cedar.
