We are building stairs using the off cuts (rounded parts of the tree after it has been sawn into boards and beams) of red and white oak and black walnut. The outside layer of the latter in particular (the cambium?) is soft. Is it OK to leave on? Creates a nice pattern on the tread edge. Also some of the oak has what appears to be a fungus in the outside layer. Is that going to spread and if yes, can I stop it? Thanks

Sacie it sounds like your slabs are suffering from being out side to long. We have done a few stairs and one spiral in slab wood. It sounds like you have the start of some rot problems or the wood has not dried yet. Your white oak is the best to with standing rot followed by the walnut. Have the slabs been outside long? I know it's temping to install as soon so you get them but you're only asking for trouble if you don't wait.
