All the homes around where I live have vinyl siding. I see all new construction going on where carpenters are just putting a 2×6 subfascia on the ends of the rafters. This is now how they leave it, even the returns on the gable ends are made of 2x lumber. The siding crews come in and cover it with white aluminum later. This looks good to me, why would I cover the 2x subfascia with a nice piece of 1x material only to cover it up with aluminum? This seems like a waste of time and material to me. Am I missing something? What do you guys do?

It is a waste of time if it's all going to be wrapped. You just leave the 2x6 sub-fascia and returns or even fly rafters. With the 2x fly rafters I always put a piece of 1x2 over that to match the existing house and then they wrap that. There's no reason to install a 1x over the sub-fascia if your going to wrap the 1x.
