The crew on my house usually had one helper for three or four mud-slingers. Can't say if this is good bad or indifferent. Just one experience. Speed depends a lot on job site. Progress from a scaffold is much less than from ground level, for example. Corners and openings are slower than big flat areas.
Here's one set of numbers to consider. My sub would typically bill $3/ft or $25/hr/man. Figure he wanted to make them equal propositions. That meant a man cost $200/day and should therefore cover 67 ft/day, scratch, brown, and finish. Of course, you aren't going to do all of those in a day, so figure 200 ft of any of the three.
Your mileage may vary. Don't claim that this is an official answer, but at least it puts numbers out there for someone else to dispute.
*Let me see if I understand things. If your sub would be charging you EITHER $3 per square foot of finished wall, OR $25 per manhour for all hours mudslingers worked (on a T basis, meaning time) then I presume YOU are buying material in BOTH cases, right? The material side of the equation for stucco work must be very small.
