Sub panel from 240v in pump house

I no longer have a well and am building a 12×12 next to my well house. Can I put a sub panel in right after my disconnect switch then route 120v to my new building? I wasn’t sure because it’s NM-B coming into a disconnect. Also, would it serve me better to just run UF 240v in conduit to a panel in the new building so I only have one line running to the new building?
