I have a 1.5 story house, most of the upper level is finished. There is an unfinished part that I would like to convert to living space.
The joists are currently covered with 1/2 inch plywood. Would it be as good to cover this with a layer of 1/4 inch plywood as to pull it up and put down 3/4 inch?

Well, 1/4" ply + 1/2" ply is not as stiff as 3/4" ply. Also, you'll need to make sure your joists are designed (spacing and sizing) to take whatever load you'll be adding. If so, I'd add another 1/2" layer.

Everything fits, until you put glue on it.
This sounds like an attic space tht may not have been designed as living space, so you need to be sure the framing will be adequate and tht it is possible to heat, insualte, and ventilate it, as well as have egress in case of fire.
For the immediate Q, you will need to ad a min 3/8" with glued down
