Gonna do it against my better judgment.

Do you have a payment structure for the jobs or just pay @ completion. I've only gone back to a few none- or troubelsome-payers and had no problem reminding them of the prior issues and collected 90% payment upfront.
Omit a key piece of flashing, something easy to install correctly at the last minute. When you're paid, hop up on your ladder and stick the flashing in. Sort of like the masons putting a piece of glass midway up the chimney.

In Oregon, a contractor is required to give the client a "notice of a right to a lien", when begining the job.
Make him sign a contract, include a specific place to sign acknowleging he knows you have a right to place a lien on his property if he doesn't pay or something like that. In the contract, have some percentage of labor money up front, some when job is near completion, and final 10% when job is finished upon client satisfaction.
Or something like that. ;-)

Did ya tell him you know this, and you need to be paid, you know, what we agreed to? Shake his hand, make him look you right in the eye?
Did he say yes?
Everything in writing first and both parties sign it. That's all.
Did you take a down-payment?
Even if you did, I'd hand him the invoice as soon as I was done and ask for a check.
You could also take a post dated check before you start for whatever date you agree to. Have him write it for 30 days after you plan to complete if you're so inclined. If you're holding his signed and dated check, you have his brat and potatos in a vice.
On a check like that, you would be looking at a felony charge if he didn't make good on it plus treble damages. If he's dumb enough to go that route, you should be good if he has any money at all.
