Doing a little remodeling ( kitchen/dining) what do you guys use as the standard height for counter receptacles, general room receptacles, and switch heights above the finished floor?

IMHO, forget the standards, go witha height you and W dont have to bend over to plug something into, switches low enough for 5 YO kids or GKids to reach.
I would concentrate on matching what is already in the house, so that it is consistent, especially the switches. I think about 42" , so long a s they are the same.

On counters, do you have a backsplash, if so raise he plugs higher. Gonna mount canopener or undermount radio, add a higher plug. Dont forget the fan hood plug, dont install in center, that where the duct is. Always install 4S (bigger electric boxes), there is barely enough room for a GFI plug with 3 line coming in and out. Might as well install 2 pairs of duplex outlets at each box. Use higher rated plugs (20 amp) in the kitchen, they last longer. Trash compactor, insta-hot and dishwasher plugs?
GENERAL wall outlets are height of hammer handle 18 inches bottom of box
Markwood, I install counter receptacles at 42" to bottom of box(only if standard height cabinets are used). General receptacles at hammer handle length from bottom plate to bottom of box. On the switches I install at 48-1/2" from ceiling(8ft.) to top of box( this helps the drywall hangers). Thats what I do but others may do different. Dalewood
