I am about to install 3/8x 12×12 ceramic tile on walls in a bathroom, what should I use to adhere them to the walls, Mortar or the glue type adhesive?
guidance is greatly appreciated!

If they will be in a wet area, like the shower or tub surround, then thinset is definately the way to go. Mastic does not belong in a wet area.
If it is walls in the room like wainscoting, then mastic is ok. Don't use mastic on the floor.
If you are doing a shower or tub surround, I hope you are using something on the walls other than plain sheetrock.

Thinset mortar for walls.
Nice job.
I also use running bond rather than stacked for most of my stone work.

12 x 12 on walls means you need the wall plane finished to a perfectly flat surface first. Any irregularities will ruin the job
