Has anyone here used Timberlok or Ledgerlok fasteners in red cedar? I know stainless is the preferred choice but I’m having a little trouble finding the sizes I want in stainless. It seems like a pretty tough coating on these and they work great with PT. If it matters, most of my fastener holes will end up being capped with cedar plugs.

I'ver reused these bolts on different projects and have found very minimal loss of the surface coating. I think you should be good.

Stainless steel is the best choice for cedar/redwood, as you noted.. Check out our website for Stainless Star-Drive or the bronze coated lags if you can't find the size in stainless. If you need test data on the coatings, shoot an e-mail, I think you will find they will fit your needs and are an excellent alternative to the products at the big box.
