Due to the size of my property and proposed building location, I’m going to end up with a driveway about 1200 ft long. The power company is going to bring service in to the house via underground. Since they will have the trench open, can I run telephone and Coax in the same trench without future interference. If the answer is yes, any issues with sizing and separation?

Shared service trenches.
Ask the POCO. They will tell you what they accept and the seperation needed if they allow sharing.

I would also ask the Telco and whoever is the inspecting authority.
In my case there weren't any issues as long as I had approx. 12" separation. I laid the ducts, put a bunch of 12" lumber scraps between them to ensure separation, covered with sand or light gravel, then backfilled.
I would just drop another pipe in the hole and pull in the cable later. Use at least 3/4" so it is easy to pull.
